Why is “Contribution per kitchen minute” empty?
The ranking needs a food cost and an estimated preparation time for every dish. Menu in the Hub has no field for the preparation time yet, which is why the dishes are missing there.
Under Menu › Analysis you find Contribution per kitchen minute: what a dish earns for the time at the pass. A dish that ties up the kitchen for long moves down, even if it earns a lot per plate.
For this ranking, every dish needs two things:
- a Food cost, see Food cost and margin
- a rough estimate of its preparation time
The preparation time cannot be entered on the Menu screen yet. Below the ranking it therefore says how many dishes are missing without a food cost and how many without a prep time.
