Where does a figure come from?

In the Figure and source table, each figure says what it is calculated from, for example revenue divided by receipts from the till, or planned hours times hourly wage from the Rota. On the right under Check you see whether the data is complete.

In Analytics, below the daily chart, you find the Figure and source table. Each row shows the value and, beneath it, where it comes from.

The rows

  • Average ticket: revenue divided by the number of receipts, from the till.
  • Per guest, “estimated”: revenue divided by reserved guests. Walk-ins are not counted, so the figure tends to be too high.
  • Labour cost ratio: planned hours times hourly wage from the Rota, relative to revenue. If it says “planned on … of … days”, some days with revenue have no shifts in the plan.
  • Void rate, Discount rate and Food cost ratio appear here if you take part in the trade comparison. Food cost comes from consumption and waste in Stock.
  • Tips: only what your till actually sends. If it does not, you see a dash with the reason instead of a zero, such as “No data”, “Not in the till export”, “Only partly recorded” or “As of …”.

Check

On the right, in the Monthly report or Weekly report, Check shows “all there” or the number of notes:

  • “POS on … of … days” and the last day with revenue. A day without a receipt is a rest day or a gap.
  • “… hours from the shift plan”, with “Planned, not clocked” and open shifts without a person.
  • “… reservations, … guests”, with “Walk-ins are not counted”.

If days are missing, check under Tills whether your till is delivering.
