Kitchen, stock and hygiene

Create a recipe

Under Stock › Recipes, choose Edit next to the dish, add stock articles and quantities with Ingredient, and choose Save recipe. You also need the Menu module, because the recipe belongs to the dish.

A recipe says which stock articles go into one portion, and how much of each. From it the Hub works out the cost per portion and the theoretical usage in your food cost.

Requirements

  • The Menu module: the Recipes tab only appears in Stock with it.
  • The dish is on the menu, the ingredients are articles in Stock.

How it works

  1. 1. Open Stock › Recipes. Each dish shows “no recipe yet” or its number of ingredients, food cost and sale price.
  2. 2. Choose Edit next to the dish.
  3. 3. Choose Ingredient, pick the stock article and enter the Quantity per portion in the base unit, so in g, ml or pieces.
  4. 4. Repeat for every ingredient. Below, food cost and margin update as you type.
  5. 5. Choose Save recipe.

Good to know

  • If an ingredient has no purchase cost yet, it says “no price” next to it. The food cost is then too low, and the Hub only writes it to the dish once no gap remains.
  • A complete recipe writes its food cost to the dish on the menu when you save. If purchase prices change, save the recipe again so the value on the dish catches up.
  • The recipe does not change the sale price. What a dish may cost is your decision.
  • The Hub rejects the same ingredient twice in one recipe.
